CLEANING
Carefulobservationofthenishedfoodproductwill
helpdetermineoptimallteringfrequency.Filtering
the cooking oil at regular intervals will help ensure
food quality.
FOR BEST RESULTS: Do not allow the temperature
of the oil to decrease below the “setback” temperature
of250°F(121°C)whenltering.Iflteringattheendof
the day, pump oil back into the kettle while still hot.
Do not allow oil to cool in mobile oil drawer before
returning to kettle.
OIL FILTRATION INSTRUCTIONS
CAUTION
METAL PARTS OF THIS EQUIPMENT
BECOME EXTREMELY HOT WHEN
IN OPERATION. TO AVOID BURNS,
ALWAYS USE HAND PROTECTION
WHEN OPERATING THIS APPLIANCE.
CAUTION
OPERATORS MUST BE MADE AWARE OF THE HAZARDS
INVOLVED IN THE OPERATION OF A HOT OIL FILTERING
SYSTEM. ON-SITE SUPERVISION DURING THE
FILTRATION PROCESS AND THE CLEANING PROCESS IS
STRONGLY RECOMMENDED.

1. Identifythekettlethatrequiresoilltration.Only1kettle
can be drained at a time.
2. Open the front access door. Place the mobile oil drawer
underthedrain.Carefullyplaceltercartridgeinto
the bottom of the mobile oil drawer and connect the
hosetotheltrationhoseconnectiontting.Withthe
Nozzle valve in the “NOZZLE OFF” position, slowly
rotate the Kettle Drain valve counterclockwise until
rotation stops and the Kettle Drain valve is in the
“OPEN” position. Power to the main control panel will
automatically switch “OFF.”
3. Allow contents of the fryer to completely drain into the
mobile oil drawer.
4. Connect the optional oil discard hose/nozzle to the
rinse nozzle hose connection and point nozzle into the
kettlebeingltered.Rotaterinsenozzlevalve“ON.”
5. Press the PUMP “ON” to allow the oil to circulate
throughthedrainsystemtoushcrumbs.Usingthe
brushes provided, brush the sides and bottom of the
fryer while the oil is circulating through the system.
6. Press the PUMP “OFF” and allow contents of the
fryer to completely drain. Disconnect oil discard hose/
nozzle and drain hose into kettle.
7. Rotate the Kettle Drain and Rinse Nozzle valves
clockwise to the “CLOSED” position.
8. Press the PUMP “ON”andallowthefryertorell
to the recommended level adding additional oil/
shorteningasrequiredtomaintainproperlllevel.
9. Press the PUMP “OFF” button.
10. After the frypot has completely refilled, pull
out the mobile oil drawer and filter cartridge.
See Filter Replacement instructions. Discard the
disposable paper or carbon filter into a proper
receptacle, or clean off reusable mesh filter. Clean
the filter assembly and oil drawer, if needed.
11. Replacetheoilltercartridgeandreturnthedrawerto
the proper position beneath the fryer.
